Sticky braised wings

This recipe came about when my wife agreed to adobo wings for dinner, but asked that I make them sticky. So I took my usual adobo recipe and added a few extra ingredients. The result was sticky wings, with a syrupy sauce that had a hint of barbecue.

Ingredients

1 hr 30 minutes
4 to 6 servings
  1. 1/4 cupsoy sauce
  2. 1/4 cuprice wine vinegar
  3. 1/4 cuphoney
  4. 2 tbsptamarind puree
  5. 18 clovesgarlic, peeled, crushed and roughly chopped
  6. 1thumb-sized nub ginger, peeled and sliced
  7. 2 tbspwhole black peppercorns
  8. 1 tspred pepper flakes
  9. 4bay leaves
  10. 24-30chicken wings (I used the flats)

Cooking Instructions

    Put all the ingredients except for the chicken wings in a mixing bowl and stir to combine. Add the wings and toss to coat. Cover and leave in the fridge to marinate for 1 hour.

    Add a splash of veg oil to a large nonstick pan on medium-high heat. Pat the wings dry, then fry them in batches for about 2 minutes per side. Return all the wings to the pan, then pour in the marinade. Turn the heat down to medium. Let simmer for 20 to 25 minutes until the wings are cooked and the sauce slightly thickened. Strain the sauce before serving.

Going to try this recipe soon. I make adobo all the time, and my kids love it, so when I saw this I was like, "Ooooo"....
