Ingredients

16 servings
  1. Mix these and set aside
  2. 3-4medium or large bananas
  3. 2 Tbspbrown sugar
  4. 1 1/2 tspvanilla extract
  5. 3/4 tspground cinnamon
  6. Cream together first 3 ingredients, then add eggs
  7. 1/2 cupbutter, softened
  8. 1 cupsugar
  9. 2 Tbspsour cream or Greek yogurt
  10. 2eggs, room temp
  11. Whisk in a separate bowl
  12. 2 cupsall-purpose flour
  13. 1 tspbaking soda
  14. 1/4 tspsalt
  15. Crumble
  16. 1 tspcinnamon
  17. 1 cupflour
  18. 1 cupbrown sugar
  19. 6 Tbspbutter, cold

Cooking Instructions

    Mash bananas, brown sugar, vanilla extract, and ground cinnamon.

    In a large bowl, cream butter and sugar together and sour cream until light and fluffy.
    Add in eggs and beat until mixed.

    Sift in flour, baking soda, and salt.
    Stir until just combined. Add in sour cream and stir.

    Pour in mashed bananas, and mix until combined.

    Divide batter into 2 loaf pans

  6. 6

    Combine crumble ingredients. Cut in butter with a pastry cutter, and mix until the topping looks like coarse crumbs. Sprinkle coating evenly over the batter in both pans.

    Bake at 325F for about 35-40 minutes or until cake tester comes out clean with just a few moist crumbs stuck to it.
    Allow to cool for 10 minutes. Move to a wire cooling rack.
