A very simple kabuli chana recipe..

Ingredients

1 hour 30 minut
3-4 persons
  1. 1 cupkabuli chana, soaked in water overnight for 12 hours, washed & strained. 1/2 cup chana dal washed, salt to taste
  2. For Masala
  3. 2-3 tbsp mustard oil,
  4. 1 small pc ginger chopped finely,
  5. As neededWhole garam masala
  6. 1 Bari Elaichi,
  7. 1 small pc of dalchini,
  8. 4-5 laung,
  9. 5-6 kali mirch,
  10. 1 tejpatta,
  11. 1 tspgarlic paste,
  12. 1/2 tsp ginger paste,
  13. 1-2 tbsp onion paste,
  14. 1/2 tsphaldi,
  15. 1 tbsp dhania
  16. 1 tsp red chilli powder.
  17. 2 tbsp fresh tomato purée,
  18. to tastesalt
  19. 1/2 tspgaram masala powder,

Cooking Instructions

  1. 1

    Firstly take a pressure cooker, add chana, salt & chana dal. Add 4 cups water, place the lid, give 8-10 whistles.

    Switch off the flame, allow it to depressurise. Keep aside.

  3. 3

    Now take a wok, add oil, heat it. Add ginger & whole garam masala, sauté it for a while.

    Add ginger garlic paste, also add lil water, sauté it for a while. Now add onion paste, add lil water also, stir fry it for a while.

    Lower the flame now, cover it with the lid, cook it until onion turns brown. Add tomato purée & salt, stir fry till oil separates.

    Add haldi, dhania & red chilli powder, again add lil water, increase the flame, stir fry it until oil separates.

  7. 7

    Add garam masala powder, stir it.

  8. 8

    Add chole now, stir it for a while. Add water if required.

  9. 9

    Place the lid now give 4-5 whistles.

  10. 10

    Switch off the flame, allow it to depressurise.

    Take out in a serving bowl, garnish it with chopped dhania patta & ginger juliens.
