Ingredients

2 servings
  • 1 cupbasmati rice
  • 2 cupsmixed vegetables (carrots, beans, potatoes, and cauliflower cut into cubes)
  • 200 gmpaneer cut into cubes
  • 3medium onions sliced
  • 3 tbspcurd
  • 2 tbspginger garlic paste
  • 2-3chopped green chillies
  • 1/2 cupchopped green coriander leaves
  • 1/2 cupmint leaves
  • 1 tspwhole jeera
  • 2 tbspjeera powder
  • 2 tbspdhania powder
  • 1 tspsaunf powder
  • 1 tspKashmiri red chilli powder
  • 1/2 tspturmeric powder
  • 1 1/2 tspsalt or to taste
  • 1 tbsplemon juice
  • 2bay leaves (tej patta)
  • as needed Oil for deep frying
  • 1 tspkewra essence
  • Garam masala
  • 2black cardamom
  • 6green cardamom
  • 1 inchpiece of cinnamon
  • 5cloves
  • 10peppercorns
  • 1star anise
  • 1 pcmace

Steps

  1. 1

    Soak the rice for half an hour. Boil it with a bay leaf and a teaspoon of salt until it is 80% cooked. It should be grainy when mashed between fingers.

    Deep fry two sliced onions until golden brown and keep aside.

    In the same oil, deep fry the paneer pieces and the potato cubes until they colorize.

    Heat 3 tbsp of oil in a flat bottom pan. Use the same oil you fried the onions in for extra flavor. Add in the bay leaf, the whole garam masala, and the whole jeera.

    When they start to crackle, add in one sliced onion and saute until it changes color.

    Add in the ginger garlic paste and green chillies. Cook for a minute.

    Add in the vegetables and saute for a minute.

    Add the jeera powder, dhania powder, saunf powder, Kashmiri red chilli powder, turmeric powder, and salt. Mix well.

    Add the curd and the paneer. Save some paneer pieces for the top layer. Mix well.

    To arrange, first switch off the flame. Top the vegetables with half of the fried onions, chopped coriander leaves, and mint leaves. Save some for garnish. Cover it with the boiled rice.

    Top the rice with coriander leaves, mint leaves, fried onions, and the remaining paneer pieces. Add a tablespoon of the onion flavored oil and the kewra essence.

    Cover it with a lid. Switch on the flame and cook on high for 2-3 minutes. Reduce the heat and cook for 3-4 minutes. Switch off the flame and let it rest for 5 minutes. Remove the lid.

    Subz Biryani is ready to serve. Garnish with lemon slices and chopped coriander leaves, mint leaves, and the fried onions.
