Carrot Salad Recipe - A vegetarian salad recipe that's extra delicious with a super fresh taste.
Healthy and Flavorful, this grated carrot salad adds a burst of flavour to any meal. It's an easy to make salad that can be made ahead of time. It taste especially wonderful when enjoyed soon after it is made. Much of that goes to the crunchiness of the freshly grated carrot.

Wash, peel, and grate the carrots. Add it to a bowl.

Roast peanuts. Remove the skin and slightly crush it in a blender. Add it to the grated carrot.

Add salt and lemon juice. Mix well.

Heat oil in a tadka pan. Add mustard seeds and allow them to crackle. Add cumin seeds and allow them to sizzle for a few seconds. Add asafoetida. Add green chilies and curry leaves. Add turmeric powder. Saute for few seconds and off the flame.

Pour the tadka over the carrot mixture. Mix well with the help of forks.

Delicious Carrot Salad is ready. Serve in a bowl and enjoy it. It adds flavor to any meal.
