  • Ingredients for the garlic shrimp
  • 1 lb. (454 grams)peeled and deveined shrimp
  • 2 tablespoonsolive oil
  • 3 clovesgarlic, minced
  • 2 tablespoonschopped parsley
  • 1/2 teaspoonsalt
  • Other ingredients
  • 4Mexican flour tortillas
  • Black bean salad
  • 2 cupsshredded lettuce
  • 2 slicescheese, cut into small cubes
  • Oil for frying
  • Ingredients for the black bean salad
  • 3 cupscooked black beans
  • 1/2 cupdiced red onion
  • 3/4 cupcooked green beans, chopped into small pieces
  • 1/2 cupcooked carrot, diced
  • 1/2 cupdiced red bell pepper
  • 1/2 cupdiced green bell pepper
  • 3/4 cupcooked celery, diced and cooked until just tender
  • 2 tablespoonschopped cilantro
  • 1/4 cupolive oil
  • 2 tablespoonsrosé wine vinegar
  • 1 teaspoonsalt
  • 1/4 teaspoonground black pepper
  • Ingredients for the tomato and avocado salad
  • 1tomato, diced
  • 1avocado, diced
  • 1 tablespoonolive oil
  • 1/2 tablespoonlemon juice
  • 1/4 teaspoonsalt
  • 1 teaspoonchopped cilantro

Steps

    In a large bowl, mix together all the ingredients for the black bean salad until well combined.

    In a deep pot, heat vegetable oil for frying the tortillas. Once the oil is hot, place a tortilla in the oil and use a mesh ladle to press down the center, submerging it in the oil. The sides of the tortilla will rise up, forming a hat shape. Remove when golden brown and place upside down on a tray lined with paper towels to drain excess oil.

    Make the tomato and avocado salad by mixing all the salad ingredients together in a small bowl.

    Place the tortilla hats on serving plates.

    In the center of each hat, add a layer of lettuce, some black bean salad, tomato and avocado salad, and the cheese cubes.

    In a skillet, heat the olive oil and sauté the garlic for a few seconds. Add the shrimp and cook until they turn pink. Add the cilantro to the shrimp when they are halfway cooked.

    Divide the shrimp among the tortilla hats.

    Sprinkle a little cilantro on top and serve.
