Let's check out how was mushroom discovered ??? You can say it accidentally, in one word. The word 'mushroom' is derived from the French words, fungi & moulds. Once a melon-grower near Paris, discovered mushroom growing on his growth fertilizers &bthen he decided to cultivate this exotic delicacy commercially especially in Persian restaurants.
I have made "Mushroom Kadai" by giving it a twist of smoky flavour.

Once a melon-grower near Paris, discovered mushroom growing on his growth fertilizers &bthen he decided to cultivate this exotic delicacy commercially especially in Persian restaurants.
I have made "Mushroom Kadai" by giving it a twist of smoky flavour.
Steps

Firstly cut and wash the mushrooms well. Heat a pan & fry the mushrooms with little turmeric powder and salt. Keep it aside.

Now in the same pan, just saute the onion, capsicum & bell pepper cubes just for few seconds by adding a pinch of salt. Keep it aside.

Now heat a pan. Add some oil to it, when the oil gets hot, put jeera, cinnamon sticks, black cardomom, green cardomom. Let them splutter a bit. Then add chopped onion & chopped green chillies to it. Keep the flame low and saute it for about a minute.

Then add ginger-garlic paste. Mix everything well and again fry the masala for 3 mins. Then add tomato puree to it. Give everything a good mix.

Then add dry masalas like cumin powder, coriander powder, salt, turmeric, red chili powder, sugar & garam masala powder. Mix everything well & cook the masalas on a low flame, until oil starts leaving from the masalas.

Once the masala is done, add fried mushrooms to it. Give it a mix & saute it with the mushrooms for few more seconds.

Then add water to it. Mix it and now add boiled peas to it. Mix it well. Then add half tbsp of roasted besan to it & mix it.

Now cover the pan & cook it over a low flame for 2 to 3 mins. Then add capsicum & bell pepper cubes to it. Mix it then cook it for 3 more minutes.

Finally, add some chopped coriander and give it a mix.

Now for giving it a smoky flavor, burn a piece of charcoal. Put it inside a small Vati (small steel bowl) pour a tsp of ghee over it. Blow it hard then quickly cover the pan and let it remain as it is for about 10 mins.

Your Smoky Mushroom Kadai is now ready to serve. Serve it with rice, naan, parathas, or tandoori roti.
