Ingredients

Serves 3 servings
  1. 1 headbroccoli
  2. 2 2/3 cupsfresh orecchiette (about 250 grams)
  3. 7 ouncesItalian sausage (about 200 grams)
  4. 1/2 clovegarlic
  5. 2 cupsbreadcrumbs (about 200 grams)
  6. as neededExtra-virgin olive oil,
  7. as neededWhite wine,
  8. as neededSalt,
  9. as neededBlack pepper,

    Trim and wash the broccoli, then blanch it in salted water for a few minutes. Drain and set aside.

  2. 2

    Heat a drizzle of olive oil in a large skillet with half a clove of garlic, then add the sausage, removed from its casing and crumbled.

  3. 3

    When the sausage is browned, add the reserved broccoli and deglaze with a splash of white wine. Season with salt and pepper, and let everything cook together. When done, roughly mash the broccoli.

  4. 4

    Drizzle some olive oil in a pan and add the breadcrumbs. Toast, stirring constantly, until golden brown.

  5. 5

    Cook the orecchiette as usual. When done, toss them with the sauce for a few minutes. Serve topped with toasted breadcrumbs and grated Grana cheese.
