A delicious pasta dish I wanted to make my own, featuring an ingredient that's always in my kitchen—'mollica atturrata,' or toasted breadcrumbs.

Trim and wash the broccoli, then blanch it in salted water for a few minutes. Drain and set aside.

Heat a drizzle of olive oil in a large skillet with half a clove of garlic, then add the sausage, removed from its casing and crumbled.

When the sausage is browned, add the reserved broccoli and deglaze with a splash of white wine. Season with salt and pepper, and let everything cook together. When done, roughly mash the broccoli.

Drizzle some olive oil in a pan and add the breadcrumbs. Toast, stirring constantly, until golden brown.

Cook the orecchiette as usual. When done, toss them with the sauce for a few minutes. Serve topped with toasted breadcrumbs and grated Grana cheese.
