Twice Cooked Pork

This is a standard household recipe that I have been making for a very long time.

※ If you want a thicker flavor, use 2 heaping Tbsp of tianmianjiang and 2 tsp of soy sauce.
※When using spring cabbage, since it's already so tender, you don't need to parboil.
Since stir-frying things usually comes out watery for me, I added katakuriko slurry to thicken. Recipe by Yuuyuu0221

Ingredients

  1. 1/4Cabbage
  2. 150 gramsPork belly (boiled pork)
  3. 1/2or 2 small Red or green bell pepper
  4. 1Japanese leek
  5. 1/2knob Minced ginger
  6. 1 cloveMinced garlic
  7. 1 tspDoubanjiang
  8. 2 tbspTianmianjiang
  9. 1 tbsp★Sake
  10. 2 tsp★Soy sauce
  11. 1 tsp★Oyster sauce
  12. 1/2 tsp★Sugar
  13. 1/2 tsp★Chinese soup stock
  14. 1Sesame oil
  15. 1Pepper
  16. 1Katakuriko slurry

Cooking Instructions

    Roughly chop the cabbage, slice the leek diagonally, cut the pepper in half and roughly chop. Cut the boiled pork into 5 mm thick slices.

    Parboil the cabbage in salted water and then drain. (Or cook lightly in the microwave.) Cook the pepper in oil.

    Heat some sesame oil in a wok and saute the ginger and garlic. Add the pork and pan-fry on medium-low heat until both sides are browned.

    Add the doubanjiang and tianmianjiang and mix in well. Raise the heat to high and add the pepper, leek, and cabbage. Stir in the ★ ingredients.

    Lastly, pour in the katakuriko slurry to thicken the sauce.

    Step 4: ※ Don't coat the meat with the doubanjiang and tian mian jiang right away. Let it simmer a little directly on the pan's surface until fragrant, and then coat the meat.
