Easy Mashed Sweet Potato Snacks

I made these to use up a load of sweet potatoes. Because this recipe doesn't use butter, eggs nor sugar, it results in a really light snack. You can give them to kids as well.

These snacks might taste better if you steam the potatoes instead of boiling them before mashing. But I wanted to use one pan, so I chose to boil them. Recipe by manamusume

Easy Mashed Sweet Potato Snacks

Ingredients

10 servings
  1. 2 mediumSweet potato (preferably the Asian / Japanese variety)
  2. 1 tbspMaple syrup
  3. 1Black sesame seeds (to taste)

Cooking Instructions

    Peel the sweet potato, cut into chunks and boil.

  2. 2

    Once soft, use the the lid to drain out the water. Place the pot back on the heat and evaporate the rest of the water whilst shaking the pan

  3. 3

    While mashing the sweet potatoes in the pan with a masher, add the maple syrup and black sesame seeds, and mix. Adjust the amount of these ingredients depending on how sweet your potatoes are.

    Once cooled, take out spoonfuls of mixture, wrap with cling film and shape tightly into balls.
