Lemon Ricotta Pancakes

Cooking Instructions

Mix flour, baking powder, sugar and salt in a bowl.

Whisk together milk and ricotta cheese.

Add egg, vanilla and lemon, whisking all together.
- 4
Fold in the dry ingredients just to combine. Do not overmix or your pancakes will not be fluffy.

Melt butter in a pan set on medium.
- 6
Add pancake mix in batches forming circles. Fry on both sides for about 2 minutes each.

Serve with strawberries or blueberries.
