I always grab the martha white packets of muffin mix, whether its blueberry, banana nut, wild berry or lemon poppyseed when I'm at the store. I usually make the blueberry muffin mix to make my weekend morning pancakes, but today i decided to try the lemon poppyseed! And i def dont regret it!

Ingredients

  1. 1 pkgmartha white muffin mix 7 oz (whichever flavor you prefer)
  2. 1/2 cuppancake mix (just add water kind)
  3. 1egg
  4. 1/4 cupmilk
  5. Add water til you reach the consistency you like
  6. Butter and syrup as much you want!

Cooking Instructions

  1. 1

    Heat griddle or pan to medium or a little more and spray.

    Add all ingredients in a medium sized bowl, add water last til you reach the consistency you like.

    I threw out the lemon muffin pack! But here's the blueberry.

    Add whatever size pancakes you wish to make to the griddle or pan.

    Wait til edges look more solid then flip. Watch though, I've found this recipe to burn easier then just using the plain box mix of pancakes!

    Add butter to the tops, then smother with syrup and enjoy!
