Ingredients

4-6 servings
  1. 1 lbrice stick noodles
  2. 1 ctamarind concentrate
  3. 1 cfish sauce
  4. 1 cbrown sugar
  5. 1/3 csiracha sauce
  6. 2 tspgarlic powder
  7. 4chicken thighs, trimmed, cubed
  8. salt
  9. pepper
  10. onion powder
  11. garlic powder
  12. vegetable oil
  13. 4 clovesgarlic, minced
  14. 6scallions, chopped at angle
  15. 2 cmung bean sprouts
  16. 1/2 cpeanuts, roasted, unsalted, crushed or chopped
  17. 1/2lime

Steps

  1. 1

    Prepare noodles for stir fry by soaking in warm water according to package. Drain completely.

  2. 2

    To make sauce, whisk together tamarind, fish sauce, sugar, siracha and garlic powder in a bowl

  3. 3

    Season chicken with remaining seasonings. With a hot wok and oil, cook chicken completely.

  4. 4

    To the wok add garlic. 1 minute later add noodles. Mix and fold well. 2 minutes later add sauce and mix and fold. Last, add scallions, sprouts and peanuts. Do not scorch. Cook until done.

  5. 5

    Squeeze lime juice on top and serve.
