Ingredients

  • 2 tablespoonsbutter
  • 1/2 cupbrown sugar
  • 1 canpineapple in syrup, (about 28 oz) drained
  • 5cherries
  • 2 1/4 cupsflour
  • 1 1/2 teaspoonsbaking powder
  • 1 teaspoonsalt
  • 1 stickbutter, (about 3 oz) at room temperature
  • 3/4 cupsugar
  • 3eggs
  • 1 teaspoonvanilla extract
  • 1 1/4 cupsmilk
  • 1/8 cupvegetable oil

Steps

  1. 1

    Preheat the oven to 350°F.
    In a pan over low heat, melt the butter with the brown sugar. Pour this mixture into a 9-inch cake pan.

    Arrange the pineapple slices so they don't overlap and place the cherries. Set aside.

  3. 3

    Mix all the dry ingredients for the cake in a bowl and set aside.

  4. 4

    Cream the butter with the sugar in a mixer and gradually add the eggs and vanilla.

  5. 5

    Add the remaining ingredients, alternating between the dry and liquid ingredients, and beat until you have a smooth batter.

  6. 6

    Pour into the pan carefully so as not to move the pineapples. Bake for 25 minutes or until cooked through. Cool and unmold.
