Place the ginger, galangal, lemongrass, peppercorns, cilantro roots, and garlic in a pot. Add the chicken and enough water to cover.

Bring the pot to a boil over high heat. Once boiling, reduce to medium heat and skim off any foam. Season with all the seasonings.

Continue to simmer for about 45 - 60 minutes. Once done, arrange on a plate.

For the three-flavored dipping sauce, pound the chilies, garlic, and cilantro roots until fine.

Season with all the seasonings, mix well, and adjust the taste to be slightly sour, sweet, and salty. Serve in a small bowl.
