Originally a version with tempeh. Good with tempeh but as it was a bit starchy tried it with a beef substitute. A bit spicier with the beef substitute, so may need to adjust Sriracha. Leftovers are great for lunch even if cold.

Originally a version with tempeh. Good with tempeh but as it was a bit starchy tried it with a beef substitute. A bit spicier with the beef substitute, so may need to adjust Sriracha. Leftovers are great for lunch even if cold.
Cooking Instructions

Heat olive oil in a frying pan. Saute onions for 4-5 minutes on medium heat

Mix tamari, vinegar, mirin, Sriracha, garlic, ginger and sugar in a small bowl.

Add beefless beef and saute. Add a tbsp of water and cover if needed to prevent burning.

Mix sauce into beefless beef and onion mixture. Add broccoli slaw and bok choy. Add a couple tbsp of water and cook covered for 3-4 minutes.

Remove lid and saute until vegetables are tender crisp or to your preference.

Dress with sesame oil. Mix and serve topped with sesame seeds.

The ingredients are pretty simple and making it is rolling the egg mixture like a log shape. I would be honest, it wouldnt be easy at first but once you get the hang of it, youll become master in rolling hehe. Even how thin the layer would be :)For this recipe i added cheese in every layer to add flavor. And we love cheese :) this might not be the common practice but I added milk to lighten the mixture and for added calcium! Aside cheese, you can also add nori, vegetables or even meat. And by the way, I am using a round non stick frying pan and its possible! You dont have to use the rectangular one. This has been my go to breakfast meal when my boys like some eggs for breakfast. This is the base recipe I start with usually, then from there I'll throw in whatever extra veggies I have on hand (peas, mushrooms, peppers, etc.).
