Originally a version with tempeh. Good with tempeh but as it was a bit starchy tried it with a beef substitute. A bit spicier with the beef substitute, so may need to adjust Sriracha. Leftovers are great for lunch even if cold.

Ingredients

3-4 servings
  1. 1/2sweet onion, sliced
  2. 1 packageTrader Joe's beefless beef
  3. 1 tbspolive oil
  4. 3 tbsptamari or coconut aminos
  5. 1 1/2 tbsprice vinegar
  6. 2-3 tbspmirin
  7. 1/2-1 tbspSriracha
  8. 1/2 tbspchopped garlic
  9. 2 tbspgrated ginger
  10. 2 tspcoconut sugar
  11. 1-12 ozbag of broccoli slaw
  12. 1/2-1baby bok choy sliced or bean sprouts
  13. Sesame seeds
  14. 1 tbsptoasted sesame oil

Cooking Instructions

  1. 1

    Heat olive oil in a frying pan. Saute onions for 4-5 minutes on medium heat

  2. 2

    Mix tamari, vinegar, mirin, Sriracha, garlic, ginger and sugar in a small bowl.

    Add beefless beef and saute. Add a tbsp of water and cover if needed to prevent burning.

    Mix sauce into beefless beef and onion mixture. Add broccoli slaw and bok choy. Add a couple tbsp of water and cook covered for 3-4 minutes.

    Remove lid and saute until vegetables are tender crisp or to your preference.

    Dress with sesame oil. Mix and serve topped with sesame seeds.

You may use coleslaw mix in a bag if you prefer or cannot find broccoli slaw. I may make this with half the amount beef and add cilantro at the end next time. I like a lot of veggies.
