My oven broke down and this was inspired by a YouTube video from Ochikeron. Love her innovative videos. Please search her YouTube for a detailed way of cooking. Because I only had a blender so was unable to beat the egg mixture to a fluffy consistency. This still tasted quite yummy! Very low sugar so you can add more if you prefer sweeter desserts!

Ingredients

  1. Cake
  2. 1/4 cuprice flour
  3. 2 tbspsglutinous rice flour
  4. 2eggs
  5. 2 tbspsbrown sugar
  6. Tofu Cream
  7. 300 gtofu (firm)
  8. 1/2 blockGula Melaka (Or 2 tbsps coconut sugar)
  9. 1/2 tbspscoconut oil (optional)

Cooking Instructions

    Drain tofu by weighing it down with something heavy for at least 30 mins. Then wrapped with paper towels and microwave on high for 1 min. This is to remove excess water from the tofu. Let cool.

    Blend tofu cream with sugar till well combined. If need be, add coconut oil to reach desired consistency. Place in fridge to let it stiffen up even more.

    Blend all cake ingredients.

    Wet a few kitchen towels and place it in a large pan. Then place a parchment paper over it. Pour in batter and cook on low heat for 7-8 mins till tops of cake looks dry.

    Remove from pan. Cover cake with cling wrap and let cool completely. Then spread cream over and enjoy!

Note to self: Blend cake mixture in tall cup. Steam cake and let cool. During this time, blend tofu cream in tall cup and place in freezer to cool rapidly.
