Moist Madeleines--Just Mix and Bake

I came up with this while I was testing various recipes.
Bake these in different molds using the same batter. They're delicious with chocolate chips or raisins placed on top before baking. When you have guests over, make the madeleines in different molds with different toppings and make it look like you're serving a variety of cakes! Recipe by Eriko

Cooking Instructions

Put the ★ ingredients into a large bowl and mix with a whisk until there are no lumps.

Add the beaten eggs and milk into Step 1, and mix well with a rubber spatula until it's no longer floury.

Add the melted butter, vanilla essence, and lemon juice to Step 2, and mix well with a rubber spatula.

Once you finish mixing, preheat the oven to 180℃.

Brush the mold with melted butter. (You don't have to coat the mold with butter, but it makes it easier to remove the madeleines and easier to wash the mold.)

Pour the batter into the mold. (Don't fill to the tops, since the madeleines will rise while baking).

Bake in the oven at 180℃ for 18-20 minutes, and they're done. (For small cookie-sized madeleines, bake for about 15 minutes)
