Fluffy Egg Roll Popovers

I got the idea for this recipe from Neiman Marcus's recipe book. I used the original recipe many times, then adapted it to my own no-fail recipe by adjusting the flour ratio. At restaurants, they bring the popovers to your table hot and freshly baked. At home, I serve them with my homemade mango butter. Someday I hope I can make the jumbo-sized popovers they serve at Mariposa restaurant.
Make sure the eggs are brought to room temperature. Let the batter rest for 1 hour.

Cooking Instructions

Bring the eggs to room temperature.

Warm the milk for about 2 minutes. You should still be able to stick your finger in the milk when it's at the right temperature.

Sift and combine the ● ingredients.

Whip the eggs for about 3 minutes on medium speed. The eggs should change to a light cream color.

Add the milk and mix it in on low speed.

Add the flour and mix for about 2 minutes.

Let the mixed batter rest for about an hour. This batter cannot be made to far in advance, so be sure to bake the popovers on the same day you prepare the batter.

Pour the batter into a mold. I use a muffin pan that makes 12 muffins. Important! : Preheat the oven to 230ºC.

Bake at 230ºC for 15 minutes. Then turn the oven down to 190ºC and bake for 20-30 minutes more until done.

When done, the centers should be hollow.

Savor the fluffy, moist center of these popovers.

Eat these with butter or cream while they're still hot.

My husband and I visited the Jordon Pondhouse in Acadia National Park 3 times. The first 2 times we were blown away by their famous popovers. The last time, in September 2021, we were underwhelmed to say the least. They were hot and poofy, but the flavor was bland and they were overly browned. Then it said to heat the pan with butter in it and bake the popovers in a "hot oven." Since that wasn't very specific, I looked at a few popovers recipes online. I did more research and noticed that most recipes called for more eggs. There were several blog posts that referred to the need for the ingredients to be room temperature. The ingredients are pretty simple and making it is rolling the egg mixture like a log shape. I would be honest, it wouldnt be easy at first but once you get the hang of it, youll become master in rolling hehe. Even how thin the layer would be :)For this recipe i added cheese in every layer to add flavor. And we love cheese :) this might not be the common practice but I added milk to lighten the mixture and for added calcium! Aside cheese, you can also add nori, vegetables or even meat. And by the way, I am using a round non stick frying pan and its possible! You dont have to use the rectangular one. This has been my go to breakfast meal when my boys like some eggs for breakfast. My aunt is Filipino and makes the best egg rolls ever! These aren't traditional lumpia (Filipino egg roll) but they are amazing. I asked how she make them and this is how it's done.
