My fiancée and I started dieting. We wanted to keep the carbs down so we had to make our own jerky, without sugar. This recipe is not spicy, at all. She can't handle heat.

Ingredients

6-8 ounces
  1. 1 poundThin Sliced Steak
  2. 1/4 cupSoy Sauce
  3. 1/4 cupWorcestershire Sauce
  4. 1 1/2 teaspoonsKosher Salt
  5. 1 teaspoonGround Black Pepper
  6. 1/2 teaspoonGround White Pepper
  7. 1 teaspoonPaprika
  8. 1 teaspoonGarlic Powder
  9. 1 teaspoonOnion Powder
  10. 1 teaspoonMinced Garlic
  11. 1/2 teaspoonLemon Juice

Cooking Instructions

    Slice steak into your preferred jerky size. We use ribeye or bottom round but your favorite should work.

    Mix Soy Sauce, Worcestershire Sauce and Minced Garlic in microwave safe bowl and microwave until warm enough to dissolve salt, around 30 seconds.

    Add remaining ingredients and stir until equally distributed. Make sure no lumps of season remain.

    Place steak in quart freezer bag and cover with marinade. Be sure to get all seasons into bag.

    Close bag, make sure all steak is covered, label, and place in refrigerator for 8-36 hours. Flip bag occasionally to keep all steak in marinade.

    Remove from refrigerator and place on oven or dehydrator rack making sure the strips are not touching. Dehydrate at 150 F for 6 hours.

    Test for texture and add one more hour if crisper jerky is desired. Remove from rack and let cool for five minutes on paper towel. Store in air tight container and enjoy.
