Healthy Black Sesame Soy Milk Pudding

I wanted to make a healthy dessert, so I came up with this recipe that doesn't use eggs or heavy cream. I didn't even imagine that I could make such a soft and jiggly pudding without heavy cream.

Please don't bring the soy milk to the boil. Heat it up, and once you start seeing bubbles around the rim, turn off the heat. Recipe by Hacchun

Ingredients

4 servings
  1. 4 gramsPowdered gelatin
  2. 2 tbspWater
  3. 200 mlSoy milk
  4. 1 tbspBlack sesame seed paste
  5. 20 gramsSugar
  6. 1/2 tspHoney

Cooking Instructions

    Add water to the gelatin and leave it for about 10 minutes.

    Heat soy milk in a pot and turn off heat once it starts to bubble slightly (do not boil). Add in sugar, soaked gelatin from Step 1, and honey. Mix well to let it all melt.

    In a bowl, add the black sesame seed paste. Gradually add the mixture from Step 2 into the bowl and dissolve the paste. Once dissolved, put the bowl over ice water and let cool as you mix.

    Once it starts to thicken, pour into the cups and it's done after chilling in the fridge for about one hour.
