Ingredients

1 hour
10 - 12 cookies
  • 50 gunsalted butter
  • 35 gpowdered sugar
  • 10 gegg yolk
  • 1 tspVanilla paste
  • 80 gcake flour
  • 18 galmond flour
  • Raw sugar for dressing cookies dough
  • 1egg white

  1. 1

    Mix butter (room temperature) with a spatula, add powdered sugar and mix well.

    Add the yolk and mix.

  3. 3

    Add all the dry ingredients. Don’t forget to sift them.

  4. 4

    Fold it until the lumps are gone. Flatten and let it sit in a fridge for an hour.

    Make it stick shaped (1.2 diameter), coat the dough’s surface with egg white and generous amount of sugar.

    Cool it in the freezer for 30 minutes.

  7. 7

    Slice the dough into 0.8in thick.

    Put them on the pan lined with parchment paper.

    Preheat the oven to 170ºC. In the meantime, let the dough sit in the freezer. Bake the cookies for 17-18 minutes.

    Cool completely on wire rack.
