  • 1/2 cupfinely grated cucumber (with skin)
  • 1 cupthick whole milk Greek yogurt
  • 1 tablespoonlemon juice (fresh best)
  • 1/2 tablespoonextra-virgin olive oil
  • 2garlic cloves, grated
  • 1/4 teaspoonsea salt
  • 1 tablespoonchopped fresh dill

    Place the cucumber on a towel and gently squeeze out a bit of the excess water.

  2. 2

    In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, and dill. Chill until ready to use.
