Cooking Instructions

Cut the broccoli into small pieces and blanch to retain crisp texture. Finely chop the parsley and quarter the mushrooms.

Briskly sauté the broccoli, mushrooms, and parsley with olive oil and season with salt and pepper. Transfer to a plate and set aside.

Cut the bacon into small pieces and fry with garlic in olive oil. Add the quinoa, 2 cups of water, and soup stock granules and turn up the heat to high.

Once it starts to bubble vigorously, reduce the heat to low and cook for about 15 minutes until all the water is absorbed. Stir occasionally. Add the coriander powder.

Season the quinoa with salt and pepper and stir in the vegetables from Step 2. Top with soft-set fried eggs and serve.
