Payesh ( kheer ) made of Choshi , Choshi is hand rolled small small grain type made out of rice flour and sun dried.
Prepared with jaggery.

Steps

Take Chushi packet

Roast in ghee till golden brown

Take a heavy bottom vessel, pour milk and give 4-5 times nice boil, add Chushi grains and keep stirring under medium flame, gradually milk thickens as Chushi plumps.

Check grains whether they have turned soft or not, if required cook more and if required add more milk, so need to keep extra milk in hand.
After grains are cooked properly, then add jaggery, let it melt and cook for just 3-4 minutes and kheer is ready. Dry fruits can be added. - 5
The kheer is good to serve only after 2-3 hours of cooking. Garnish with dry fruits before serving.
