Cooking Instructions

1. Wash and pat dry the turkey breast tenderloin. 2. Remove the membranes and slice thinly at an angle.

1. Add 1/4 teaspoon salt, 1/4 teaspoon sugar, 1/4 teaspoon white pepper, 1 1/2 teaspoons soy sauce, 1/2 teaspoon smoked paprika, and 2 teaspoons rice wine. Mix gently. 2. Add 1/2 teaspoon fine sweet potato starch and 1 tablespoon avocado oil to lock in moisture and flavor. 3. Seal and let sit for 20-30 minutes.

1. Slice jalapeño peppers into rings and remove seeds; peel and slice half a potato. 2. Add about 1 1/2 tablespoons (20 ml) oil to a pan, and over medium-low heat, briefly cook the pepper rings and potato slices until fragrant (sprinkle each with 1/8 teaspoon salt for base flavor). 3. Set aside.

1. Add more oil to the pan, and first sauté the white part of the green onion, garlic slices, and dried green peppers until fragrant. 2. Scatter the turkey slices in the pan, increase the heat to high, and stir-fry until the turkey turns white.

Add the pepper rings, potato slices, and green onion tops, and continue stir-frying for 1-2 minutes.

1. Add 2 teaspoons soy sauce to enhance the flavor. 2. Continue stir-frying until the sauce is fragrant and the color becomes glossy.

The turkey slices are especially tender and flavorful; the pepper rings and potato slices are also very tasty.
