Chicken breast (boneless)
Pesto sauce (I’ll attach a separate recipe to make fresh pesto) or you can use store bought
Olive oil
Parmesan (optional)
Salt & pepper

Place chicken breast in glass pan. Brush olive oil onto both sides. Top with a layer of pesto (as much or little as you like).
Top with salt, pepper and Parmesan (optional).

Bake at 400 degrees for 20 minutes.
Check chicken is cooked through. Take out of the oven, let sit in pan outside oven for 10 more minutes.
