Street-Style Bengali Chicken Chowmein

Chowmin is a thinnest version of noodles. It's a most popular street food around the lanes of Kolkata. It's a favorite dish of every Bengali. The Chinese cuisine when came to West Bengal, they gave it a different Bengali touch and made this unique dish. It's available in both veg and non-veg varients. I dedicated this dish to my mom as she's away from her hometown since years for our studies & making us stand on our feet. So it's time to make her feel special and bring back her memories and make her feel good. That's what as a daughter I could do by sitting at home & as I'mein fond of cooking, I thought of taking her back to her childhood memories which she used to enjoy having her favorite chowmin, with her friends. On this Women's Day let's make something different and surprise all the special women out there.

On this Women's Day let's make something different and surprise all the special women out there.

Firstly heat a pan, add 2 tbsp of oil, now add chopped garlic in it and fry until the raw smell of the garlic goes off. Now add chopped onion, chopped capsicum, cauliflower flowerets and green peas and mix everything well. Cook until the veggies turns little soft.

Till the time the veggies are getting cooked, heat enough water in a pan, add some salt in it and a tbsp of oil. Give it a mix. Now once the water comes to a boil, add the chowmin in it. Let it boil until it's 70 to 80 percent done.

Now strain them immediately by putting them over a strainer and wash the chowmin gently with cold water. Then pour 2 tsp of oil over it and with gentle hands apply the oil over the chowmin. Once all the water gets strained out spread it over a large plate; so that the chowmin doesn't sticks to each other.

Now let's make egg crumble. Heat another pan, add a tsp of oil, once the oil gets heated, drop an egg into it. Then add a pinch of salt and mix it by gently crumbling the egg like we do for making egg bhurji. Once it's done, keep this aside.

Now let's come to sauted veggies, once the veggies turns little soft, with your hands, little by little, pour the chowmin over it. Now add some salt, sugar, some chilli flakes, crumbled egg, vinegar and some tomato ketchup. Mix everything well with the chowmin. Mix them well with the help of 2 spoons.

Then add some chowmin masala, pepper powder, some chilli flakes and mix it. Then finally add the fried chicken pieces, chopped green olives and some chopped coriander and give it a final toss.
Your Street-Style Bengali Chicken Chowmin is now ready to serve. Serve it with some tomato ketchup and chopped onion over it to make it more flavourful and to give it a street-style touch. - 7
NOTE : I have used ready-made fried chicken, you can also prepare it a home just by marinating the chicken pieces just by adding some ginger-garlic paste, some lime juice, some chilli powder and some salt. Marinate it for about an hour then deep-fry it and use it accordingly.
