Chitoi Pitha is a traditional Indian rice based steamed pancakes, which is eggless and require no oil or butter . The process of making this dish is something that surely will excites you.....
We use earthen cookware to steam these pancakes and then dunked them in Date Palm Jaggery( Nolen Gur ) flavoured milk .
The pitha is so soft, fluffy, mouth melting, and healthy.
This Winter Special delicacy is famous in many states of India and Bangladesh with various names and taste.
On the Special occasion of Women's Day....I dedicate this recipe to my Mom , which is one of her favorite dish . She is a wonderful person and a great cook . All my cooking skill I learned from her only . Happy Women's Day Maa ! You are my strength , my inspiration . You always encourage and guide me in every step of my life .... On this special occasion I would like to take an opportunity to thank my Mom for everything she has ever done for me

Soak rice overnight and then grind it to a smooth paste.
Add water as required to make the batter flowing consistency.
The batter needs to be of perfect consistency, not runny but thin enough.Too much water and it gets mushy, too less water and it gets dry. - 2
Boil the milk. Once start boiling, keep the flame on low and cook for 8-10 minutes.
Further, add crushed cardamom, saffron strands and Jaggery. Cook for another 4-5 minutes. Turn off flame.
Keep the Jaggery flavoured milk ready. - 3
Heat earthen pan. Keep the flame on low.
Pour a ladle full of batter on heat pan, cover the pot with earthen lid and let the Pitha steamed for 3-4 minutes or till cooked well. - 4
Once the pitha is steamed dunked them in the creamy sweet jaggery milk.
Chitoi Pitha is ready to serve. - 5
Garnish with chopped pistachios and serve with some jaggery milk.
