First take out fillo pastry sheets (they are ready made pastry sheets used for making baklawa)out of fridge and let it set in room temperature for 30 mins

Prepare Gujiya stuffing.In a medium heated pan take 2 cups of khoya and roast it on medium slow flame.Cook it for another 3 to 4 min until it turns into lighr golden brown color.

Turn off the flame and let it cool down.

In a pan add this mawa once cooled down. Now add other ingrediats for gujiya like dry coconut,sugar,nuts powder,cardamom powder and mix it together.Gujiya stuffing is ready.

Take fillo sheets which we keep outside.In a baking tray to prepare baklawa we have to prepare layers of fillo sheets with gujiya stuffing inside.

For that, take a baking try. Make sure it is wide enough for baklawa pastry.Apply ghee/butter on the bottom of the tray

On the top of it you put 1st fillo sheet.(I have taken almost 9 inch by 11 inch size of fillo sheet.you can choose your own)Be careful while working with fillo sheet as they are very thin

On this sheet apply some butter with brush on whole sheet.Now add another layer of sheet. Repeat the process until you make 6 layers of fillo sheets.

Now on the 6th sheet apply some butter. Spread all the Gujiya stuffing on the top of sheet.

Now we have to add 10 layers of the fillo sheets on the top of gujiya stuffing.

Add one fillo sheet on the gujiya stuffing.Brush it with butter and then add next sheet. Repeat the process upto 10 layers

On the 10th and final fillo layer sheet apply butter on the top.

Fillo sheets are ready for baking.Preheat oven for 175 C.
Before putting it for baking, Cutting the baklawa in square or diamond shape with knife. - 14
Put the try in preheated oven and bake it for 175 C for about 25 to 30 mins.

Meanwhile prepare sugar syrup for baklawa

In a pan take 4 cups of sugar and 2.5 cups of water. Cook it on medium heat and once boiled add 1 tbsp of lemon juice to avoid crystallisation.Cook this sugar syrup for 8 to 10 mins.

You can add cinnamon to sugar syrup but its complete optional.

Once sugar syrup is ready. Keep it aside.

After 25-30 mins check baklawa and pour prepared sugar syrup directly on baked baklawa in the baking tray.

Please note that either baked baklava or sugar syrup should be warm.If one thing is warm other should be little cooked down.

For best results let baklawa rest in sugar syrup for 1 hr and top it with nut powder and saffron like gujiya while serving.
Tip- while preparing baklava layers do not over apply butter other wise you will not get the perfect layering of baklava as shown in pic.
