Cut vegetable different shape as you want.

Boil in water few minutes..light boiled vegetable don't absorb oil.

After that keep in strainer

Make liquid mixture of baisan. Add baking soda half tsp and add all ingredients

Now dip vegetable in mixture and fry

Dish out in plate and sprinkle chat masala and mayonnaise.

Good for Iftar time.
