My family doesn’t eat a lot of granola, but when we do, I prefer homemade. I like to use it as a topping for Greek yogurt, but I’ve also been known to grab a handful as a snack. 😋

Ingredients

40 minutes
12 to 16 people
  1. 4 cupsold-fashioned oats
  2. 1and 3/4 cup chopped raw nuts (I used walnuts and pecans)
  3. 1 teaspooncinnamon
  4. 1/4 teaspooncardamom
  5. 1/4 teaspoonsalt
  6. 1/4 cupolive oil
  7. 1/4 cupunsalted butter, melted
  8. 1/4 cuphoney
  9. 1/4 cuppure maple syrup
  10. 1 teaspoonvanilla extract
  11. 1/2 cupunsweetened shredded coconut (optional)
  12. 3/4 cupdried fruit (e.g. raisins, cranberries, apricots, dates, etc.) (optional - to be added AFTER baking)

Cooking Instructions

    Assemble ingredients and preheat oven to 300°F

    In a large bowl, combine oats, nuts, spices, and salt.

    Pour in the oil and melted butter, then mix really well. Make sure everything is evenly coated.

    Pour in the honey, syrup, and vanilla and mix really well again.

    Line two 16x12” baking sheets with aluminum foil and spray lightly with baking spray.

    Spread granola out onto the two sheets, then bake for a total of 40 minutes.
    Every 10 minutes, stir the granola to ensure even baking!

    Optional: Add the coconut halfway through the baking time. This will ensure that it toasts but does not scorch.

    Let cool completely, then add dried fruit if desired. Store in an airtight container at room temperature for up to one month.
    Serve mixed with milk and/or your favorite cereal, or use as a topping on yogurt and fresh fruit.

    Notes:
    🥣 Stirring often will produce a loose granola. If you prefer chunky granola, press it down onto the baking sheet and do not stir during baking. Let it cook, then break it into chunks.

    🥣. Other add-ins include sunflower seeds, pepitas, flaxseed, and wheat germ. After baking, you can stir chocolate chips into the cooled granola if that’s the way you wanna roll 😎

@sherrys_chronicles - OMG THANK YOU! I have no idea how I managed to omit two of the most important ingredients in the recipe LOL. Thank you very much for bringing this to my attention. I edited the recipe and reposted it to show that you should add one quarter cup each of honey and maple syrup. Of course, if you prefer a sweeter granola, by all means, increase that amount.
