Banana Pecan Granola

One of my all time FAVORITES because of its versatility and health benefits. Can be put on top of yogurt, ice cream, smoothies, oatmeal, or simply eaten all on its own!

Ingredients

30 min total
2-4 (people)
  1. 2 1/2 cupsrolled oats
  2. 1 Cupcrushed pecans
  3. 1/2 Cupcrushed almonds
  4. 1/2 Cuppumpkin seeds
  5. 3 teaspoonsflaxseed
  6. 1/2 Cupchocolate chips
  7. 1 1/2banana, mashed
  8. 2 tablespoonshoney (optional for sweetness)
  9. Get creative!**
  10. Instead of banana, try peanut butter
  11. Try other nuts like cashews, hazelnuts, Brazil nuts, etc
  12. After baking try dried fruit, mini-marshmallows, or pretzels

Cooking Instructions

    In large bowl, combine oats, crushed pecans and almonds, pumpkin seeds, flaxseed, and chocolate chips. Mix together

    Pour in mashed banana and mix in till everything is evenly coated.

    Using parchment paper, line two baking sheets and spread granola out evenly.

  4. 4

    Set the oven to 350° F and let bake for 10 to 15 minutes (I would go closer to 15 if your want a crunchier granola)

    After baking, let cool for 10 minutes then store in air tight container in fridge or room temp.

I grew up in an American family with European heritage always making delicious food for holidays, birthdays, and simple get-togethers. I love to cook and bake, especially if it's a very challenging or new recipe. It gives cooking that sense of adventure, you know?
