In a bowl, mix the flour with the salt.

In another bowl, beat the milk with the egg. Gradually add this mixture to the flour, stirring well to prevent lumps.

Add the melted butter and mix thoroughly.

Heat a 6-inch (15 cm) skillet over medium heat with a little oil. Pour 1/4 cup of the batter into the center and tilt the pan so the batter spreads to the edges. Cook until golden on one side, then flip with a spatula and cook until golden on the other side.

Repeat until all the batter is used.

I made some filled with crab meat and topped them with béchamel sauce. Others I filled with orange jam or blackberry jam, which I love.
