Chop the beef (it doesn't need to be too fine; you can also use pre-ground beef).

Marinate the beef with the minced garlic, black pepper, sugar, MSG (optional), a little pork fat (for tenderness), and a bit of vegetable oil. Let it marinate for 30 minutes.

Wash the betel leaves, wrap the beef mixture in the leaves, and secure with toothpicks.

Bake at 210°F (100°C) for 10 minutes, turn off the oven and let cool for 5 minutes, then bake for another 5 minutes to make the outside crispy. Serve with fermented tofu sauce or anchovy dipping sauce, along with fresh herbs and rice vermicelli for extra flavor.
