Simple and Easy Unniyappam Recipe using just rice flour. Unniyappam is a Naadan Kerala Snack prepared with Rice, Jaggery, Bananas alongwith coconut and sesame seeds and flavored with cardamom. A Traditional Indian Sweet made on all festivals which is liked by everyone.

Into a large mixing bowl, add the lightly roasted rice flour. To it add crushed cardamom, white and black sesame seeds, salt, and ghee.

Add freshly grated coconut to the rice flour mixture. Or you can fry small bits of coconut pieces in coconut oil/ghee and add them to the prepared batter.

To make the Jaggery syrup, in a small container add jaggery and water and heat it till the jaggery melts and becomes syrup. It should not become thick. Strain the jaggery syrup for any impurities and allow it to cool.

In a mixer, jar adds the chopped bananas and jaggery syrup (liquid jaggery) and blend it.

Add the blended mixture to the rice flour mixture. Add little baking soda and mix until well combined. Allow the mixture to rest for an hour. If using fried coconut pieces then you may add them now and mix them well. The batter should be thick.

Heat oil in an Appachatti/Paniyaram (Pan). When the oil is really hot, reduce the flame to low-medium. Drop spoonfuls of the batter into the slots in the pan. Let it cook on a medium flame for a few minutes. Keep turning the unniyappams in between till you get a golden brown color on both sides.

Remove the unniyappams from the pan and leave it on a paper towel to drain away the excess oil. Once cooled, store the Unniyappams in an air-tight container.

Tasty Traditional Indian Sweet - Unniyappam is ready to serve.
