First, rinse the white peas and soak them in water overnight.

Add the peas to a pressure cooker with a little salt and turmeric powder. Cook for 4 whistles until soft.

Heat cooking oil in a large pot. Add cumin seeds, asafoetida, and crushed whole spices. Sauté, then add the finely chopped onions and cook until golden brown.

Add the ginger, garlic, and green chili paste and sauté.

Meanwhile, gather all the ground spices. Add a little water to make a paste.

Add the finely chopped tomatoes and curry leaves, and cook.

Once the tomatoes are well cooked, add the soaked spice paste, Kashmiri red chili powder, and salt to taste.

Mix all the spices well and cook until the oil separates.

Add the misal masala.

Add the boiled white peas.

Pour in the reserved water from boiling the peas and cook for a few minutes.

Add more water as needed—the gravy should be thin so the misal remains soupy after cooking.

Cover and let the misal cook for a while.

Once everything is well combined and cooked, turn off the heat. If you like, you can make a tempering (tadka) and add it to the misal.

Your hot misal bhaji is ready. (Note: I haven't used coconut here, but you can grind coconut with the whole spices and add it to the misal if you like.)

Quickly slice the dinner rolls (pav) in half, spread with butter, and toast until lightly crispy.

To serve, pour the misal gravy into a serving dish, squeeze lemon juice on top, sprinkle with thick sev or gathiya, add finely chopped onions and cilantro, and serve with spicy green chutney, sweet tamarind chutney, and hot buttered pav.
