Place a pan on flame and 2 tbsp of oil and heat well on medium flame.

Now add all whole spices, red chilli, and bay leaf and fry on low, medium flame.
Now add 1 tbsp of grated ginger, one finely chopped green chilli, and fry everything slightly.
Now add 1/2 tsp of asafoetida and mix well. - 3
Now add three pcs of chopped tomato, two slits of green chilli, mix everything well, and cook on medium flame until it starts releasing the oil.
Now add salt as per taste, mix well, and cook everything well.
Now take 1/2 tsp of turmeric powder, 1/2 tsp of black salt, 1/2 tsp of black pepper powder, 1 tsp of red chilli powder. 2 tsp of coriander powder, 1/2 tsp of dry mango powder. - 4
Now add all masala to the pan, mix everything well on low flame, and cook for 1 minute.
Now add 4 to 5 boiled, mashed potatoes, mix everything well, and roast on a medium flame for 2 minutes. - 5
Now add 1 tsp of dry fenugreek leaves and mix well.
Now add 3/2 cups of water and mix well. - 6
Now, close the lid and cook for 2 minutes.
Now add 1/2 tsp garam Masala, chopped Green Coriander.
Now your delicious Aloo Sabzi is ready, and You can enjoy it.
