Amaranth Poori with Aloo sabzi

Traditional popular delicious.. Fasting/Vrat platter
Vrat ki Poori are prepared with amaranth flour( ragira flour), seasoning with red chilli powder and deep fried.
Vrat ki Sabzi is prepared with boiled potatoes and seasoning cumin seeds ,green chilli , black pepper powder, adding coarsely ground peanuts makes it more appetizing.
Serving with apple pomegranate curd raita for wholesome meal.

Steps

In mixing bowl add amaranth flour,red chilli powder, sendha namak and ghee(moin). Mix well.

Add little little warm water and bind into semi stiff dough. Keep aside for 10 minutes.

Knead dough again for a minute. Divide into 8 equal flattened balls

Roll each prepared dough flattened ball in round shape Puri. Deep fry rolled poori in hot oil.

To prepare Vrat ki Sabzi..In cooking pan add heat ghee. Do tempering of cumin seeds as splutter add green chilli pieces. Saute for 30 seconds.

Add boiled potato pieces, coarsely ground peanuts, sendha namak. Mix well and cook for 2 minutes.

To prepare fruity curd raita. Whisk chilled curd with salt. Add pomegranate pearls and finely chopped apply. Mix well.

Serve/ Relish Delicious Amaranth Poori with Aloo Sabzi, Fruity curd raita as fasting meal.
