Bajra Rotli or Pearl Millet Flour flatbread is one of the favourite main dish in Kathiawadi cuisine. Goes well with Daal, Curries with gravy, kadhi , pickle and butter. Here is my version which I made on similar method of Gakar which is a famous Maharashtrian flatbread.

Ingredients

30 minutes
4 servings
  1. 2 cupBajra or Pearl Millet Flour
    Pithala and Bhakri (पिठलं आणि भाकरी)
  2. 1/2 cupWhole wheat flour
    Puran Poli (पुरणाची पोळी)
  3. 2 tspFine powdered jaggery
  4. 1 tspSesame seeds
  5. Salt, chopped green chillies as per taste
  6. Hot water to knead the dough
  7. For plating: ghee, raw Chillies and onions
  8. Peanut and Gram chutney 1/2 cup

Steps

30 minutes
  1. 1

    First, in a deep bowl, mix the flours, chillies, sesame, jaggery, salt and mix to a firm dough with hot water.

    Heat a tawa and keep a wet cloth handy the wipe it.

  3. 3

    Take a medium ball from the dough. Roll it round, then in a cylindrical shape, again roll together. Then repeat 2 times.

    Then with a rolling pin, roll out to a small disc. Place in hot tawa. Roast on base side on low flame. Then turn and roast the top.

    Hold with tongs on flame and let it puff up on both sides. Then place in a cloth lined hot box and apply ghee.

    Make all the rotlis similarly. You can make 2 to 3 at same time. Then apply ghee all over.

  7. 7

    Serve piping hot with peanut - gram- garlic chutney or any curry. Serve raw onion, green chillies for extra spice and punch in your meal.
