Ingredients

  1. 1 sliceveal from leg,cut thin
  2. 1 inchcube fat salt pork,chopped fine
  3. 1egg slightly beaten
  4. 1/2 cupcracker crumbs
  5. Little stock
  6. 1 tablespoonbutter
  7. 1 cupcream
  8. Salt,pepper and celery Salt to taste

Cooking Instructions

    Wipe veal,remove bone,skin and fat, pound. Chop trimmings of meat,add pork add cracker crumbs. Moisten with beaten egg and hot stock. Spread thinly on each piece of veal. Roll,fasten with toothpick sprinkle with salt,pepper and celery salt, lightly roll in flour. Fry in hot butter until brown. Add cream and cook on low 30 minutes till cooked through.
