Spaghetti with Fresh Tuna, Wild Asparagus, and Soy Sauce

Boil salted water in a pot for the spaghetti.

In another pot, bring water to a boil.

Clean the asparagus and set aside for a moment.

Cut the tuna into cubes and place in the pot with hot water, cooking for about five minutes.

Remove the tuna and let it drain in a colander for a moment.

In a pan, heat the olive oil and finely chopped garlic until golden, then add the asparagus. Season with salt, black pepper, and chopped parsley, and sauté for a few minutes. Add a cup of hot water and cook.

Once the water from the asparagus has evaporated, add the tuna, adjust the salt and black pepper, and cook for about ten minutes.

Drain the spaghetti al dente and place in the pan with the tuna and asparagus, adding a bit of cooking water and soy sauce. Toss to combine.

Plate and serve with black pepper and a drizzle of extra virgin olive oil.
