Ingredients

  1. 1/2 kgwhole wheat flour
  2. 350-400 gmsghee
  3. 1 tbspsalt
  4. 1 tbspajwain
  5. as requiredMilk for kneading the dough
  6. For Daal
  7. 1 cupmoong dal
  8. 4 cupwater
  9. 2 tbspchana dal
  10. 5-6garlic pods crushed
  11. 1 tbspchopped ginger &green chilli
  12. 1-2bay leaves {tejpatta}
  13. 1 tspcrushed fennel seeds {sanuf}
  14. 5-6 tbspghee
  15. 1/2 tspSalt red chilli, dhaniya &haldi powder &1/2 tsp hing powder

    For Daal … take moong & chana dal wash it nicely. Soak it in 4 cups of water & add crushed garlic, bay leaves, sanuf & all spices & ghee. Soak it for ½ an hour &pressure cook for 3 whistles. after finish the pressure open the cooker mash it with a masher & add little water & keep it boiling on slow flame & add chopped green chilli & ginger& lots of coriander leaves. Switch off the gas.

    For Baati …… Heat the ghee. Take the flour in a big bowl and add salt, ajwain baati chili powder, haldi powder, crushed sanuf, sesame seeds, chopped ginger and green chili, coriander and methi leaves (Kasoori methi instead of fresh methi). Then the masala baati will be ready. and put little ghee in it and rub the flour and ghee till it becomes like bread crumbs. It will be mutthi bandh. Take lukewarm milk and knead the flour. Knead well for 5 min. aur

    Divide the dough into equal portions and shape each portion in to even size round. Flatten the rounds using lightly using your thumb to make an indentation in the centre of the baati. You can cook the baaties in a pre-heated oven at 200 degree C. It will take 35-40 min When you aur baking the baaties turn them over occasionally. Ensure that the baaties are cooked on the inside also. Arrange the baaties on a deep bowl. Break the baati little and pour ghee on it.
