Cooking Instructions

Mash the steamed mung bean into paste, then add sugar and vegetable oil. Cook under low heat until the paste does not stick on the pan. Set aside to cool down.

Prepare the outside dough by mixing cake flour, baking powder, syrup and butter. Knead well. Leave the dough for 1 hr.

After 1 hr, color the dough with orange or yellow food coloring. Take aroung 30-40 g of the dough and flatten into 1 mm thick circle. Set aside.

Take 80 g of mung bean paste. Wrap around to the whole salted egg yolk. Make it into round ball shape.

Wrap the flatten dough from step3 on mung bean ball. Decorate the whole ball as an orange.

Bake at 150C for 4 min.

Remove from the oven and leave it completed cool. Brush with egg yolk/milk mixture. Bake for another 4 min at 150c.

I decorated the top with orange slices in syrup to make it festive.Pour a very thin layer of the orange jelly over the orange slices so that you can see them.When you're mixing in the whipped cream, add some of the step 4 mixture to it to loosen it up first before stirring the cream into the rest of the mixture.The cake is better the next day, when the sponge will have become nice and moist. Long story short, my hubby found lots of tangerines on the countertop. He kept reminding me to eat them. But I kept forgetting. Then there’re some avocados in the refrigerator which I should finish it soon too. Then hubby asked me if I could make him a cake. I am looking for my cakes recipes. But the recipe the one I like is mandatory yogurt. Since I don’t have yogurt on hand then I replace it with smashed avocado. That’s why I named it avocado cake. The glaze is so delish, sweet with tangerine and lemon flavor. It’s perfect for coffee or teatime. So I used some of tangerine to make tangerine syrup, and tangerine glaze.
