Simple kaddu (Lauki) ki Kheer, but with a new twist to it by using cooked Rice. It's a beautiful fusion with a lovely flavour and aroma. Though it's a simple one, Kaddu or Bottle Gourd makes it an interesting dish. The ingredients can be altered according to one's own preference. As it is already tried, I have given the exact measurements but you can always increase or decrease as desired. Serve it warm or cold. It is yum both the ways. I sometimes do add Fresh Cream also to make it more rich. It adds an element of richness to the Kheer. If the Malai is homemade, it's even more better. Khoya or Mawa can also be added but I don't prefer store bought one. If at all I add it, I make it at home. Add a cup of cooked Rice to a bowl of Milk and set aside for half an hour. Mash it slightly before adding Milk.

After the stipulated time, bring Milk to a rolling boil on a high heat at first with 2 or 3 coarsely crushed Cardamoms and cooked Rice. Now lower the heat and simmer. As it nears to almost 3/4 th of the original quantity, grate the Kaddu or Lauki. Try to scoop out the middle flesh or pith that's soft with Seeds.

Add the grated Bottle Gourd now and cook until the raw smell is completely gone. Add Sugar and the slivered Dry Fruits and Nuts followed by Khoya or Mawa or even Malai or Fresh Cream. Give it a good mix. That's it.

Serve it cold or warm as desired. Enjoy!
