Palm oil jollof 🍚 rice 🍽

Add water into a pot & bring to boil then add in the rice and per boil for some minutes Then strain water and set aside. In the mean time wash, cut and blend the tomato 🍅, red bell pepper, scotch pepper and onions. Add them into the pot.

Cook until water begins to dry out then add in the palm oil and fry for some minutes. Add in some water that can cook the rice with out getting it soggy. Then add in salt, Maggi, onga, curry & thyme. Stir well, cover and bring to boil then add in the fish of meat, add in the per boiled rice and stir. for some extra pepper I pounded additional red bell pepper, scotch pepper and onion. If you don’t like much pepper skip this step.

Wash and cut the spring onions and add. I add the spring onions in two batches when I added the rice and when it’s almost cook for aroma. Cover and allow to cook until water drys out and the rice is soft then off heat allow to cool then serve. I serve mine with this delicious 🤤 egg sauce. Recipe coming later! Enjoy!
