Ingredients

6 to 8 people
  • 6 ouncesbarilla gluten free spaghetti noodles
  • 2 tbspvegan butter
  • 1/2 cupnutritional yeast
  • 2 tablespoonsground chia seeds
  • 8 ouncestofu (extra firm)
  • 1 poundvegan "meat" crumbles
  • 1/2 cupyellow onion (chopped)
  • 1/4 cupgreen pepper chopped
  • 1 cupdiced tomatoes
  • 6 ouncestomato paste
  • 2 tspcoconut sugar (or one teaspoon White sugar)
  • 1 tsporegano dried
  • 1/2 tspgarlic salt
  • 1/2 cupvegan "mozzarella shreds" (optional)

    Cook spaghetti (should have about 3 cups cooked).

  2. 2

    Mix chia seeds with water and let sit for one minute to form an “egg” Drain noodles and stir in vegan butter, nutritional yeast and “eggs”.

  3. 3

    Form crust in 10” pie plate. Crumble tofu and spread over bottom.

  4. 4

    Brown “meat” crumbles, onion, and green pepper till vegetables are tender. Stir in undrained tomatoes, tomato paste, sugar, oregano, and garlic salt. Heat through.
    Add meat mixture on top of crust.

  5. 5

    Bake uncovered @ 350 for 20 minutes. Sprinkle “mozzarella” on top and bake 5 more minutes.
