Heat a wok over high heat. Add the egg and scramble. Transfer to a bowl.

Thinly slice the scallion, separating the white part from the green part. Add the white part of the scallion to the wok along with the garlic. Fry for about a minute, or until fragrant.

Add the rice to the wok and cook until warm. Re-add the egg and stir. Season with the soy sauce, white pepper and salt.

Serve topped with the green part of the scallion.
