Peel potatoes and cut in 4 equal parts. Peel and grate ginger. Chop abd wash coriander leaves.

Heat cooking oil in a wok. Deep fry potatoes and cauliflower and cook 90% and remove in a plate.

Heat cooking oil in a wok. Add cunin seeds and asafetida and saute for 30 seconds. Add grated ginger and saute for 2 minutes. Add grated tomatoes and cook on low flame.

Bow add salt, red chilli, turmeric and coriander seeds powder and mix. When oil starts leaving the sides add choppped coriander leaves and kasuri methi and mix.

Now add peas and cook for 5 minutes. When oil starts leaving switch off the flame and let it cool. Then add curd and mix well.

Now switch on the flame and cook on low flame till it boils and bubbles start coming. Add crushed kasuri methi and chopped coriander leaves and mix well. Now add fried potatoes and cauliflower and mix.

Add slight water and cook on low flame for 5 minutes. Add 1 chopped tomato cut in 4 pieces and cook for 2 minutes.

Serve hot with chapatti or parantha.
