We eat this, in our German-American January of the New Year to bring good luck for the rest of the year.

I staged this recipe, and made it easy to put in the crockpot early in the morning, before heading to work. Night before... prep your apples, onions, and cabbage, and sauerkraut, juice and all. Place all chopped veg, and apple, and sauerkraut in a large sealable plastic bowl and toss with the brown sugar and caraway seeds. Seal the container and place in the fridge until ready to combine in the crockpot with the pork roast

Before heading to work, place, the seasoned (Soul Food Seasoning, Garlic Powder, and Fresh Cracked Pepper) pork butt roast- fat side down- in the bottom of the crockpot, get your bowl of prepped fruit and veg from the fridge, and pour and pack on top in the crockpot.

Make sure the lid on your crockpot is airtight packed and detritus sealed. Set on high for 10 hours. Occasionally, stir.

Serve with mashed potatoes.
